It is so commonly made in every Punjabi home that I never thought of putting it on my blog until I signed up for a theme where we are to post every day simply lunch/dinner recipes.
This aloo baingan sabzi is very easy and quick to make. I like my baingan a bit mushy so make it in pressure cooker. it gets readied in less than 15 minutes. If you like it chunky, you may make it in a pan as well.
