Aloo Baingan is a simple dry sabzi in which potatoes and brinjal are cooked together in a tomato based masala. Addition of few simple spices turn this curry into a finger licking dish. It goes fairly well with chapati/ paratha/rice. I love to have it with khichdi.

It is so commonly made in every Punjabi home that I never thought of putting it on my blog until I signed up for a theme where we are to post every day simply lunch/dinner recipes.

This aloo baingan sabzi is very easy and quick to make. I like my baingan a bit mushy so make it in pressure cooker. it gets readied in less than 15 minutes. If you like it chunky, you may make it in a pan as well.

Instructions
  1. Heat oil in a pressure cooker till it's smoking point. Reduce heat and add cumin seeds.
  2. As the seeds splutter, add onion, ginger and garlic. Saute till onions are soft and translucent and garlic turns aromatic.
  3. Add chopped tomatoes and green chillies. Cook till tomatoes turn mushy.
  4. Add red chili powder, coriander powder and salt. Give a quick stir.
  5. Add cubed brinjals and potatoes. Stir to mix well. Add 1-2 tbsp of water, if required.
  6. Put the lid on pressure cooker and cook it on medium heat till 2 whistles.
  7. Release the steam and check if potatoes are done. If these are not cooked fully, return to the flame and cook further for couple of minutes on low flame till done.
  8. Garnish with coriander leaves and serve hot with chapatis and curd or dal.

  2. I am a very crazy person for baigan. This aloo baigan sabzi making me feel like having it right away. I always pour little ghee over it when it hot. and with curd mmmmm just yummmmmmy.
