It’s scorchingly hot these days. The temperature is going up so high that even the administration has asked the schools to reduce their timings. A good news for the kids. But we grown ups have to work for the same hours 🙁 .when I come back from college, it is so hot outside that even the car’s A.C. refuses to provide any relief. My throat feels so dry, even though before stepping outside, I gulp down lot of water. At that time, I just want to drink something that has a cooling effect and is healthy too like sugarcane juice, buttermilk, lemonade, rose sharbat etc. The options are unlimited.
Another thing that has become a common sight here in Punjab is green tender coconut. Oh!! The sight of that heap, the man cutting the tender coconut with a big knife and inserting a straw to offer you this elixir and you drink it all in one go… the feeling is beyond words!!! It’s so refreshing. Rather than consuming its water as such, I wanted to make some drink from it. When I saw the recipe of one such drink using rambutan and tender coconut, I immediately decided to make my drink using litchi, tender coconut and sabja seeds. The trio is so invigorating that immediately you feel cool and full of energy.
|Litchi ||100 grams|
|Tender coconut water||2 cups
|Basil seeds||1 tablespoon, soaked in water
- Peel litchi and take out the flesh.
- Add litchi pulp and coconut water in a blender and pulse few times.
- Take a serving glass, put soaked basil seeds in it.
- Pour the litchi and coconut water mixture over it and serve chilled topped with some ice.
