One day I was watching a cookery show on TV, there I saw the recipe of this kulcha calzone and immediately decided to make it for the theme ‘Stuffed Dishes’. This week in blogging marathon, after making Stuffed rava balls and Pizza paratha, for the third and the last day, I wanted to make some stuffed veggie and shortlisted few of them. Then that kulcha calzone recipe came to my mind and I decided to make it.

My today’s post is Amritsari Kulcha Calzone, which is a potato stuffed kulcha folded like a calzone, hence is the name.

For making this kulcha, I used whole wheat flour and instead of yeast for fermentation, I used curd. In fact I made double the quantity of dough. With half of the dough I made Pizza Paratha and with rest of the dough Amritsari Kulcha Calzone. Now straight to the recipe….

Instructions
  1. Take whole wheat flour in a bowl. Add all the ingredients under dough and knead a smooth and soft dough using warm water.
  2. Keep the dough for 1 hour in warm place.
  3. In the meanwhile, prepare the filling. For that, heat oil in a pan. Add cumin and coriander seeds. Let them splutter.
  4. Add onion and ginger and sauté till they change color.
  5. Add chili powder, turmeric, coriander powder, garam masala, pomegranate and salt.
  6. Add mashed potatoes and mix well making sure the spices blends well with potatoes. Let it cool. .
  7. Add coriander leaves and mix well
  8. After 1 hour, knead the dough again. Divide the dough into 3 equal parts.
  9. Roll out into a thick chapati. Place ⅓ of stuffing inside. Place the top half over the filling
  10. Seal the edges with fork. Transfer to a baking tray
  11. Repeat with the remaining two.
  12. Bake in a preheated oven at 200C for about 25 minutes until golden brown.
  13. Serve hot!
