Farali pancake made from gluten free water chestnut flour also known as Singhare ka aata. Iis not only healthy flour but also is eaten during fasts.

My daughter is also keeping navratri fasts this time, so I have to make something for her tiffin. Since kids love pancakes, so I decided to make pancakes that she can take to school.

I had some frozen pumpkin puree that I had made for making pumpkin naan. My kids have a very bad habit. If they see any black spot on banana peel, they won’t consume that banana. They like to have almost raw bananas. That’s why I call them parrot…eating unripe fruits.So whenever I bring bananas, some bananas will always be discarded by them on the pretext of having black spots. I have to use those bananas in banana shake, pancake or in some of my bakes.

To make pancake, I used 1 banana (overripe according to my daughter) and frozen pumpkin puree that I had made for making pumpkin naan. I didn’t use any egg or baking soda, still the pancakes came out very soft and fluffy. I served the pancakes with honey and for her school I packed it with homemade nutella in her tiffin.

Instructions
  1. Mash banana well with a potato masher or in a blender. There should not be any lumps.
  2. In a bowl take all the ingredients except ghee.
  3. Mix well to make a smooth batter of pouring consistency.
  4. Heat a non stick tawa on a medium flame, pour a drop of ghee over it and spread.
  5. Pour ¼ cup of batter and let it spread on it's own.
  6. Let the pancake cook on one side till the top almost dries.
  7. Pour few more drops of ghee over it and flip the side.
  8. Let it cook on other side as well, till golden brown.
  9. Remove on a plate and make more pancakes same way.
  10. Drizzle some honey or maple syrup on the pancakes and serve warm.
