Shopping always acts as a stress buster as well as a mood booster. The satisfaction of shopping is increased manifold if it is accompanied by something spicy and tangy. There are many options to soothe your taste buds like chat, tikki, golgappa,bhel etc. But, if you are in Delhi, a very tasty option is ram ladoo. Whenever, I had the chance to visit Delhi, I never forgot to gulp down a plate or two of those spicy treats. I had first tasted them in Delhi since my relatives live in Lajpat Nagar. Now, thankfully, these are available in Ludhiana as well outside shopping malls. Whenever I go for shopping, eating these ladoos dipped in chutney is the first thing that I do. Even my husband is so fond of them, that even if I don’t ask for them, he will certainly buy a plate. These are so easy to make that anybody who knows frying can make these without any difficulty.
Stepwise pictorial description of Ram Ladoo
Soak yellow moong dal and chana dal for 5-6 hours in sufficient quantity of water. Drain water and grind chana dal along with ginger and green chilies to a slightly coarse paste.
Beat it well with a whisker till the batter turns fluffy. It becomes very light due to incorporation of air. If you want to avoid the hassles of beating, you can add baking soda to make it light and fluffy. I personally avoid adding baking soda, as it is not a very healthy option.
Add chopped coriander, cumin powder, turmeric powder, salt and mix well.
Heat oil in a wok to a medium heat. Drop in small amount of batter in the hot oil with your hands to make small ping pong ball sized ladoos/ pakoras.
Fry till golden brown from all sides. Remove and drain on the tissue paper.
Wash and shred radish with the help of a grater.
Serve with grated radish, green chutney, imli ki khatti chutney and chat masala.
Imli ki chutney
Soak tamarind in warm water for about 10 minutes. Mash it and strain it through the strainer.
Add roasted cumin powder, red chili powder, black salt, sugar and salt.
Mix till sugar dissolves.
Imli ki khatti chutney is ready.
You can use khatti meethi imli chutney as well.
