Cheese & Herb Muffin- A flavorful savory muffin

When the name muffin is said, generally what comes to mind is a sweet cupcake either plain or with some adornments. But, as I had described in my last post muffins can be sweet or savory.

After making sweet muffin i.e. Eggless blueberry cupcake, today I made a savory muffin which my kids ate voraciously. This is the muffin with kids favorite i.e. cheese…. Loads of cheese. Not only cheese, but another kid’s favorite i.e. Sweet corns. To enhance the flavor of the muffins, I added pizza seasoning to the mixture and believe me outcomes was out rightly flavorful. Even my husband, who isn’t fond of this type of stuff, came to pick up muffins as soon as I took them out of oven. I had to ask him to wait till I take the pics.

Instructions
  1. In a bowl, take all purpose flour, baking powder and salt. Whisk them to mix well.
  2. In the flour mixture, add all the ingredients and mix well. The mixture will be quite thick and gooey.
  3. Line muffin tray with paper liners.
  4. Fill ¾ of muffin cups with the mixture. Sprinkle chilli flakes over them.
  5. Bake in preheated oven at 180 C for 25 min.
  6. Take out of muffin tray. Top with pizza sauce and grated mozzarella cheese. Serve warm.
