These days my attitude has become so lackadaisical that I’m not able to complete any task on time. Today I’m supposed to post casserole recipe in third day of the week and here I’m, not even completed last week’s tasks. Thanks to Valli, who is so tolerant that she understands (may be she is fuming inside 😉😁) and allows to post even late.

Today my sister in law came to pay us a sudden visit. The whole day was gone in minutes gossiping with didi and in the evening while she went back, she took along my dad and mom in law also. Since mom and dad prefer to eat dal and chapati only, so whenever they are gone out, I don’t make dal chapati at all. I had some left over chapatis from lunch and wanted to use them and immediately came out with the idea of making this casserole which will kill three, not two birds with one stone😁… Making my kids happy, using those chapatis and at the same completing my one day’s task of posting casserole recipe.

So here I’m with my healthy chapati casserole recipe that was so yum that my daughter asked me if that’s healthy. When my response was a big Yes. She asked me to make it everyday.

With mixed beans and corns, using leftover chapatis make an easy protein filled, fuss free vegetarian casserole in minutes.

Instructions
  1. In a pan, heat oil. Add onion and minced garlic. Saute till onion get translucent.
  2. Add tomato puree and pizza sauce. Cook for 2-3 minutes.
  3. Add mixed beans and corns. Saute for couple of minutes.
  4. Mash beans slightly and add mixed herbs, salt and chilli flakes.
  5. Mix well, check the seasoning and adjust.
  6. Butter the baking dish. Arrange chapatis at the bottom overlapping each other.
  7. Spread half of the filing, half of the grated mozzarella cheese. Repeat the layers.

  8. Bake in preheated oven at 200C till the cheese becomes bubbly.

  9. Let stand for a minute or two, then cut into wedges and serve.
