Last month I had participated in mega marathon with the theme Indian flatbreads. There were two other themes i.e. International Flatbreads and Indian dosas/crepes. My blogger friends came out with such a delectable treats that my bookmark folder is overflowing with recipes and begging me to make some.

I thought of starting with dosas. I made a large batch of dosa batter so that I can use that batter to try different types of dosas.

As I have already mentioned in my previous posts that my daughter’s friends were coming to our house to spend some time with her so I made couple of things that girls would love to devour. I made all the dishes in small size as my theme for the week is ‘Mini Dishes’.

For the last two days, I have already posted Mini coconut chocolate muffins and mini veggie idlis, so for my third and last day of this week is another mini dish…Cheesy Pizza Uttapam

To make this cheesy pizza uttapam, I used my dosa batter that I had fermented for about 8 hours and then kept in fridge to be used later. I made small uttapam on non stick tawa, topped them with chopped onion, tomato and capsicum, then a layer of grated mozzarella and finally a generous sprinkling of pizza seasoning and chilli flakes.

Oh my! These fusion cheesy pizza uttapam were sooo good and the girls were so happy. To see them happy, I was like on cloud nine.

Oh my! These fusion mini cheesy pizza uttapam sooo good, so cheesy that you won't even realize how many you have devoured
Instructions
  1. Wash and soak rice and dal for 3-4 hours.
  2. Grind them separately and then mix, add salt and enough water to make a batter of dropping consistency. Keep it for 7-8 hours to ferment.
  3. Chop onion tomato and capsicum finely, add salt and red chili according to taste and keep aside.
  4. Heat a non stick dosa tawa and pour about 2 tbsp of batter on tawa. Gently spread it to form a small thick circle.

  5. Sprinkle the mixture of veggies all over the uttapam, then a layer of grated mozzarella cheese. Sprinkle some pizza seasoning and chili flakes.

  6. Cover it with a lid and let cook on medium to low flame till bottom gets browned and crisp and cheese melts on the top.
  7. Serve hot with tomato ketchup.
