Christmas Herb & Cheese Bread/ Eggless Cheese Bread using Aquafaba

I was looking for some Christmas/New year special recipe, when my eyes caught this cheese bread. The beautiful colours imparted by vegetables and the mention of cheese instantly helped me to take the decision to bake this bread. Moreover, this bread had some other interesting features like it doesn’t require  laborious task of kneading the dough and no waiting for the fermentation of dough. The leavening is achieved with baking powder and eggs. Since I do only eggless baking, so replaced eggs with Aqua faba.

Aqua faba is the viscous liquid that is formed by cooking legumes such as beans or chickpeas in water for a longer period of time. It can be used to replace egg whites in many sweet or savory dishes.

My Sunday brunch is generally puris with chana or aloo. This Sunday, I had made chanas in the morning and reserved some liquid. I used it in the evening to make this savory cheese bread for the Christmas special dinner. The bread was so flavourful that my kids requested me to make it again the next day.

Instructions
  1. In a mixing bowl, take all purpose flour, baking powder, salt, pizza seasoning, butter, Parmesan and mozzarella cheese.
  2. Add chopped scallion and Bell peppers.
  3. Whisk together Aqua faba and milk.
  4. Add Aqua faba mixture to the dry ingredients and gather together the mixture. It will be a stiff batter.
  5. Grease a 6 inch pan. Transfer the batter into the pan and smooth out to the edges with wet fingers.
  6. Sprinkle pizza seasoning and red chilli flakes over it.
  7. Bake the bread in preheated oven at 180 C for 30 minutes, till golden brown on the top.
  8. Take out of the oven and let it cool on the wire rack.
  9. Serve this flavourful bread warm.
