Today my kids are going to be very happy… You know why… Cause I’m going to serve them  strawberry cheesecake tonight. What’s so special in that? The thing is..I just keep on dilli dalling when it comes to making cheesecake.

I can whip up and bake a cake without a delay but something holds me back in case of cheese cake. You must be thinking it to be a laborious task to make cheesecake but believe me it’s the easiest dessert ever…. Just whipping up the ingredients and left to set in refrigerator.

Creamy No Bake Strawberry Cheesecake

Cheese cake is make with cream cheese. As cream cheese is not easily available here in India, so hung curd and cream is used as it’s substitute. I used condensed milk so omitted cream from my recipe as condensed milk itself gives creaminess to the mixture. Addition of caramel sauce in the biscuit layer gives it a very nice flavour. To further enhance the flavour, I made strawberry sauce and poured it over the cheesecake.

Since I made cheesecake in silicone cup cake molds, I just took out one for clicking pics. It is simply irresistible. So I’m going to finish it. Rest are in refrigerator now. Let me see the reaction of my kids at the dinner table 😊

Instructions
To Prepare Hung Curd,
  1. Method: Put the yoghurt in a muslin cloth. Hang it for about 3 hours. Place a bowl underneath to collect the whey. After 3 hours you'll get a thick curd. Keep aside.
For Biscuit Crust
  1. Pulse the digestive biscuits in a mixie to get powder. Take out in a bowl and add melted butter. Add 1 tbsp of caramel sauce. Mix it well. Press this mixture into the cake mold and chill in the refrigerator for 15 minutes. I used heart shaped silicone molds. It's better to use springform pans to remove cheesecake easily.
For Cheesecake Layer
  1. In a small bowl, take agar agar and add ¼ cup of water. Let it soak for 5 minutes. Great in a microwave for 20-30 sec. Stir to dissolve completely. Let it cool slightly.
  2. Whisk hung curd, condensed milk and strawberry crush until smooth and creamy. Add agar gel to the mixture and mix well to combine.
  3. Pour this mixture over biscuit layer and keep in the refrigerator for 5-6 hours until set.
For Topping
  1. Mix strawberry crush, sugar and cornflour in water.
  2. Heat the mixture with constant stirring till thickened. Remove from heat and let it cool to room temperature.
  3. Pour over the set cheesecake.
  4. Serve chilled.
