My son is a real foodie, so his demands never end when it comes to food. Not only that, it is difficult  to please him as far as food is concerned. To meet his demands, I have to keep my pantry well stocked.

As far as sauces and pickles are concerned, I buy them once or twice. Then I make it a point to try them myself. Next, that pickle or sauce is passed through a panel of tasters (my kids) for acceptance. When it passes the stringent test, that makes me glow with contentment.

My son’s latest craze is, pickled cucumbers. The day he tasted them, was after me to make them. I kept on dilly dallying until one fine day, he kept cucumbers in front of me and asked me to try them at that time only.

I picked up the bottle of pickled cucumber and read the ingredients. Luckily, all the basic ingredients were there. So without a delay, I set to work and made the pickle. It just took me 20 minutes in total to make this pickle, making me wonder why I  was delaying it so much.

After making the pickle, was the difficult time i.e. waiting time. Next day I kept the jar of pickled cucumber in front of my kids. To my relief, they loved the pickle so much that half of the jar was finished in tasting itself.

Here is my take on pickled cucumbers. Don’t linger it like I did, make it and enjoy!

Instructions
  1. Wash and slice English cucumber thinly, preferably with any vegetable slicer.
  2. Place cucumber slices, chopped onion and dill leaves in the sterilized jars.
  3. Combine water, vinegar, sugar, mustard, peppercorns and salt in a saucepan. Heat it to boil, reduce heat and let it boil for about 4-5 minutes.
  4. Remove from heat and pour over cucumber slices.
  5. Close the lid of the jar and let it cool to room temperature.
  6. Place the pickle in fridge and serve after 2-3 days.
  7. These remain well in fridge upto 2 months. (Believe me, they won't stay that long as they get finished as soon as you open the bottle 🙂

  3. Honestly, we would be out of jobs if people at home weren’t or aren’t foodies so count your blessings and thank God your son is a major foodie and motivates you to cook variety. haha. Nothing beats homemade pickles. You can do it when you want in small batches and preservative free too.
