Whenever I make chocolate cake, my daughter, Sia, always takes it to school to distribute it to her friends. You know kids..
want to be centre of attraction. So by treating her friends with chocolate cake, she wants to gather all the attention. Her happiness find no bounds when even her teachers ask for the recipe and she proudly tells them that her mother writes food blogs. Sometime her friends even threaten her that if she will not bring the cake they will stop talking with her ( though jokingly).
So, for my 3rd day of blogging marathon under theme ‘chocolate’, I decided to make chocolate cake that I have sent to her school innumerable times. It even need not to be approved by kids as I already know the answer.
Here is my recipe for chocolate cake….
Step wise Pictorial Description Of Chocolate Cake With Ganache Frosting
First gather all the ingredients.
Sieve 1 ½ cups of all purpose flour, 1 teaspoon of baking powder and baking soda each and ½ teaspoon of salt.
This is how it looks.
Take 1 cup powdered sugar in a mixing bowl and add ¼ cup of oil into it.
Add milk to the mixture and beat well with a whisker till the sugar dissolves. Milk should be at room temperature.
Add 1 teaspoon of vanilla extract and mix well.
Add the sieved dry ingredients to the wet mixture in three installments. Lightly mix everything. There should not be any lumps in the batter.
Finally add lemon juice and mix well. It will become a bit frothy. You can replace lemon juice with white vinegar also.
The batter should be of pouring consistency.
Pour the batter in greased baking pan. Tap the sides to remove any trapped air.
Bake the cake in preheated oven at 180C for 40- 45 minutes. The time may vary from oven to oven or type and size of pan used. To check the doneness of cake, insert a toothpick. It should come out clean. If not, bake the cake further for few minutes till done.
Take the cake out of the oven. This is how it looks. Let it be in the pan for few minutes.
Scrap the sides and demold the cake. Let it cool completely on a wire rake for frosting.
Grate or break dark chocolate into pieces. Heat chocolate in a microwave safe bowl for 30 sec or in a double boiler i.e. in a bowl over hot water.
Pour cream over melted chocolate.
Remove from heat and whisk vigorously until the mixture is smooth and velvety.
Add vanilla and stir to combine. Set it aside to cool down and thicken a bit.
Assembling the cake
Cut the cake horizontally into two with a serrated knife.
Moisten the base with sugar syrup.
Whisk Jam to make it smooth. Apply it liberally over the cake. Then a layer of ganache over it.
Place the other half over it.
Moisten it with sugar syrup. Let the syrup absorb.
Pour ganache over the top and spread it with a spatula or offset knife.
Sprinkle grated chocolate all over the sides and top.
Let the ganache set for half an hour before slicing the cake or keep it in freezer for some time before slicing.
