Eggplant paratha……yes , you read it right. My today’s recipe under alphabet E is Eggplant Paratha’.

If you are regular at my blog, you must be aware that I’m taking part in month long mega marathon with theme A to Z Indian flatbreads. Infact, I jumped into this marathon without any preparation. Though I have to struggle to find out flatbreads under our alphabets, for letter E, I was sure from the beginning itself. The reason is, this is my secret ingredient. I have fed my kids this paratha a number of times but they don’t haven’t come to know till date that it has eggplant.

Like most other kids, my kids too hate eggplant. They don’t want to see it even. Whenever they see it in vegetable basket, will start grumbling…. Why do you bring it…Who eats eggplant… And so on. But if there are fussy, I’m also a stubborn mom. They don’t even realize when eggplant goes in sambar, bhaji they enjoy with pav, chopped eggplant in pakoras they love and this eggplant paratha. Smart hun na mein 😀.

Aloo Baingan and Baingan bharta are regular in my family. So wherever I make bharta, I keep some to make eggplant paratha for the kids. So for making this paratha you can either use leftover bharta or make it from the start.

Here is my Eggplant Paratha. Make it for those who hate eggplant. Shhhh… Don’t tell them it has eggplant 😷 it’s a secret between you and me 🙂

Instructions
  1. Peel and cut brinjal into cubes. Add ¼ cup of water and cook them in pressure cooker to one whistle.
  2. Heat oil in a pan. Add cumin and let them splutter.
  3. Add chopped onion, ginger and garlic. Saute till onion are sightly browned.
  4. Add chopped tomatoes and green chillies. Cook till tomatoes get mushy.
  5. Add red chilli powder, coriander powder and salt. Cook for a minute.
  6. Add peas and steamed brinjal. Mash brinjal with potato masher. Cook till whole of the water evaporates. Take off the flame and allow it to cool.
  7. Take wheat flour in a bowl. Add salt and knead a smooth dough by using water. Add 1 tsp oil and knead again for 1-2 minutes. Keep aside for 10-15 minutes.
  8. Divide the dough into 16 parts and make small balls. Roll out balls to make chapatis. Take one chatpati. Put some filling over it and spread it. Place another chapati over it. Fold the edges to seal it. Roll it again.

  9. Transfer to a hot griddle and shallow fry till the paratha turns golden brown and crisp.

  10. Serve hot with plain curd or onion raita.

  4. What a wonderful trick to hide eggplants into the paratha. I use to add it to the pav bhaji masala. Filing it with the bharta must make these parathas taste so delicious. Next time I have a bit of bharta left over I know what to do.

  5. Wow an eggplant paratha, never thought of stuffing this inside a paratha , I do make pancakes and stuff in different things. But this is interesting need to give a try
