Empandas/ Sweet Empandas With Creamcheese & Blueberry Filling

We are running a month long baking marathon, in which we are posting recipes from different parts of the world in alphabetic order.

On 5th day of the marathon, recipes were to be posted starting with letter ‘E’. Since I’m the last marathoner?, i.e. always posting very late, so most of the recipes get posted by the time I decide on a recipe. I wasn’t finding anything to post (just an excuse for my laziness), so I thought of skipping the alphabet for the time being. One fine day, when I was about to sleep, I got a message from Vaishalli (my fellow blogger…we call her Princi with love) enquiring about my missing post for letter E. Very next day, another message from Valli (imagine 5 O’clock in the morning ?), asking about my missing post…. Hurriedly gave the excuse that couldn’t find a post for that letter, but this is Valli… Can’t take excuses. She immediately suggested to make English muffin or Empanadas. Luckily puff pastry sheets were lying in my fridge, so I decided to make empanadas.

Two of my fellow bloggers had already posted empanadas, but those were the savory versions. So I decided to make sweet empanadas.

Empanada is a stuffed pastry, which can be baked or fried. The stuffing could be anything from savory to sweet. The shape of empanadas just reminds me of our delicious Gujiya that we make during holi or Diwali.

Here is my sweet empanada with cream cheese and blueberry filling…

Puff pastry sheet
Cream cheese ½ cup
Blueberry preserve 2 tbsp
¼ cup

Mix cream cheese, blueberry preserve and dried blueberries. Keep aside.

Roll the puff pastry sheet into a ¼ inch sheet.

With a cookie cutter, cut rounds from it.

Place 1 tbsp of filling in the centre and fold it half to enclose the filling.

Press the edges with a fork to seal it.

Bake the empanadas in preheated oven at 200C for 15 -20 minutes till golden brown.
