Falafel/ how to make falafel with cooked chickpeas

Falafel is a Lebanese street food which is made from chick peas and /or fava beans. These are in the form of balls or pattis which are traditionally deep fried but can be shallow fried, baked or grilled. These may be used as starter/ appetizer. These are generally served with tahini or hummus based dips. They act as a complete meal when served in the pita bread along with salad and tahini.

It is a rich source of protein for the people who are vegetarian or are on vegan diet. So we can call it a healthy fast food :).

Stepwise pictorial description of Falafel

 

Soak chickpeas in water overnight or 6-8 hours. Drain water and add fresh water. Boil in a pressure cooker till thoroughly cooked. Drain water and keep aside to cool.fala3

In a bowl take boiled chickpeas, chopped onion, chopped coriander, garlic, wheat flour or maida, lemon juice, cumin powder, red chilli powder, salt and pepper.fala4

Mash chickpeas to mix all the ingredients but it should not be like a paste.

Take about 2 tablespoon of the mixture. Either roll it into a ball or flatten into a patty. You can increase or decrease the size according to your preference. Similarly make balls or patties with the whole mixture.fala6

Heat oil in a skillet and test fry one falafel in the beginning.  If it falls apart add more flour to it. Fry rest of falafel at medium hot oil till golden brown on both sides. Remove from oil on an absorbent paper.fala5

Serve hot with hummus and/or tahini sauce. These could be stuffed inside pita bread. For that apply a layer of hummus inside pita pocket, and then add falafel, lettuce, onion and tomatoes. Top it with tahini sauce.fala7

Ingredients:

  • Chickpeas/kabuli chana           1 cup
  • Onion                                           1, medium finely chopped
  • Coriander                                    1/2 cup, chopped
  • Garlic                                           4-5 cloves, crushed
  • Flour/maida                               2 tablespoons
  • Cumin powder                           1 teaspoon
  • Pepper                                         ½ teaspoon
  • Red chilli powder                      ½ teaspoon
  • Coriander powder                     1 teaspoon
  • Lemon juice                                1 tablespoon
  • Salt to taste
  • Oil                                                 for frying

Method:

  1. Take boiled chickpeas in a bowl and mash them.
  2. Add rest of the ingredients and mix well.
  3. Take 2 tablespoons of the mixture and shape it the form of balls or patties.
  4. Fry in medium hot oil till golden brown.
  5. Serve hot with hummus or tahini sauce.

  2. Your Falafel patties look absolutely delicious. I love this and I once tried Falafel burger. It was so yummy. I used to prepare with soaked raw chickpeas. Next time will give a try on boiled chickpeas.

  3. I love falafel! And like you said, with pita and a little hummus, it makes a complete meal. While nowadays vegan and vegetarian food is pretty common, Falafel wraps were my saviour while traveling in past also because those are mostly the only hot vegetarian meal I could find.
