Fruity Muffins Using Frozen Strawberry /Eggless Strawberry Muffins

My kids love chocolate cupcakes, so most of the time I end up making chocolate muffins only, one way or the other. When I made Blueberry Cupcakes few days back, they were appreciated by all especially my son. This appreciation pepped me up to make more fruit based muffins.

Here, in India, we get strawberries only for a short duration of time. My daughter loves strawberries (you know anything pink…. My Pinky doll?). So I make it a point to preserve strawberries, whenever they are in season.

Now, when I had decided to make fruit based muffins, so obvious thought was to use those frozen strawberries.

I thawed and pureed strawberries to make a thick puree and used it to make tender muffins with intense strawberry flavor though I didn’t use any artificial flavor. They make perfect on-the-go snack for anytime of the day.

Instructions
  1. Take frozen strawberries out of fridge and the it in microwave for 2 minutes. Puree the strawberries and set aside.
  2. Take all purpose flour, powdered sugar and baking powder in a bowl and whisk to mix them well.
  3. Add strawberry puree, milk and oil to the flour mix and gently mix together. Do not over beat.
  4. Pour the batter into muffin cups lined with paper liners.
  5. Bake at 180 C for 25 minutes or till the toothpick inserted in the middle comes out clean.
  6. Remove from oven and let them cool for ten minutes.
  7. Take out of muffin tray and cool completely on a wire rack.
Recipe Notes

I used frozen strawberries that had sugar in it. You can make these muffins with fresh strawberries as well. In that case increase the amount of sugar to 3/4 cup.
