Gobhi Paratha is one of the most favorite paratha in my family after aloo ka paratha. While I was thinking about various flatbreads to be made under alphabets G, in spite of having other options like Girda, garlic naan, ghiya paratha, Gujarati thepla etc, I decided to go for ‘Gobhi paratha’…..Everybody’s favorite from the State of Punjab.

Gobhi Paratha

Grated gobhi with various spices and other things makes the filling for this paratha. Gobi releases water when salt is added to it that makes it difficult to roll paratha. To avoid that generally water is squeezed out of it. But with this, various nutrients also get lost in the water. To avoid the loss of precious nutrients, I add sooji to the mixture. Sooji absorbs moisture, thus making rolling of paratha easier and at the same it also enhances the taste of paratha making it crispier.

This heavenly delicious Gobhi Paratha from the state of Punjab with crisp exterior, soft & spicy interior can woo anybody.

Instructions
  1. Take whole wheat flour in a bowl. Add salt and 1 tsp of oil. Add water and knead a soft dough. Keep aside for 15 minutes while you make the filling.
  2. For filling, take all the ingredient under filling in a bowl and mix them well. Check the seasoning and adjust according to your taste.
  3. Divide the dough into 8 parts and roll into balls.
  4. Take one ball and roll into a small disc. Put about 2 tbsp of the stuffing over it. Fold the edges and seal it.
  5. Now roll the ball into a circle dusting with flour in between if filling is coming out.
  6. Heat a tawa over medium heat. Place the stuffed rolled paratha over it and cook on both sides by applying oil or ghee till golden spots appear and it becomes crisp.
  7. Serve hot with butter, curd, pickle or green chutney.
Recipe Notes
  • You can take the dough according to the size of paratha you want.
  • You can either add sooji or besan to stop filling from coming out.
  • Adjust the spice level according to your taste.
  • Do not roll parathas too thin. They taste good and are softer when a bit thicker.

  4. I’m not a big fan of gobi sabji but give me gobi parathas and I can eat a couple. I like your tip about adding semolina to the mixture as I hate removing the water. You’re right most of the nutrients come out with the water.

  5. Yummy, gobhi paratha with such a generous filling inviting me Ritu. I love these parathas more than potato. I am crazy for these, imagine in my 8th month I craved for these and husband was not ready to help me. I got up early in the morning just to make them. Still, he teases me whenever I make gobhi parathas.
