Home made Green Chili Sauce

Today is the age of ready made or ready to cook food. Everyone wants to do lot of things in the shortest possible time. That is why demand for ready made processed food is increasing day by day. No doubt, this is quite beneficial when you are pressed of time, but the other side of the coin is, sometime we don’t even come to know how much of chemical preservatives or dyes we are consuming.  That is the reason, I always prefer to make most of the things at home especially sauces and spices powders. This way, I know the ingredients. Moreover, I can adjust the ingredients according to my taste. I make them in my free time and once made, these sauces or spice powders can stay for long time. So no hassles?.

One of the sauces that is frequently made in my house after Schwann sauce is green chili sauce. My family likes spicy food, so this sauce is always in demand. Being a versatile sauce, it could be used as a sauce in fried rice, stir fries, noodles, pasta, salsa etc or as a dip with pakoras or some other snacks.

  1. Wash and wipe chillies dry. Remove their stem.

  2. Take chillies, peeled and diced potato, garlic cloves and 1 cup of water in pressure cooker.

  3. Cook it till one whistle. Let the pressure release on its own and let it cool to room temperature.

  4. Transfer the contents to food processor and puree until smooth.

  5. Strain the puree and transfer to a pan on medium heat.

  6. Add garam masala, citric acid, salt and vinegar.

  7. Let it come to boil. Lower the heat and let it simmer for couple of minutes till desired consistency is obtained.
  8. Transfer to sterile jar, once cooled.

  9. It stays well for upto 3 months, if refrigerated.
