Last year, during blogging marathon meet in Delhi, we had gone for a food walk at Chandni chowk. We enjoyed a number of famous savory and sweet delicacies of Chandni chowk, the memories of which are still lingering in my mind and heart. We had different types of chats over there, one of which I liked the most was, hot aloo chat.

Hot aloo chat is a very simple chat, just cut potato into cubes and fry them till crisp, spice them up and enjoy. But one thing is always associated with it that fried potatoes are full of calories, so guilt feeling that follows while consuming it, reduces the joy.

Last week, Valli came out with a fantastic idea of microwaving potatoes before frying. This reduces the oil absorption. When I read this, immediately decided to apply this method to check its effectiveness and let me assure you the absorption of oil decreases drastically. For making this chat, I used just two tbsp of oil and about half of the oil was left on tawa after frying potatoes.

During our that visit to Delhi, we had bought different types of spices. I had bought black chat masala that gives this chat unique flavor and required color. If you don’t have black chat masala, you can use normal one. You can also adjust the spice level according to your taste.

Lets enjoy this chat while still hot.

Instructions
  1. Wash potatoes and microwave for 3-4 minutes.
  2. Peel and cut into cubes.
  3. Heat oil on a tawa. When it becomes sufficiently hot, add a part of potatoes in it and fry them by turning sides.
  4. When potatoes become golden brown from all the sides, shift them to the sides of tawa to drain the oil and add fresh batch of potatoes in the middle of oil.
  5. Repeat the process till all the potatoes get fried. You will see that still half of the oil is left on tawa.
  6. Now transfer the potatoes in a bowl. Add chopped onion, coriander leaves, spices, chutneys and lemon juice.
  7. Mix well and enjoy spicy and tangy hot aloo chat.
