My husband likes simple Indian food, but occasionally he likes to relish on Chinese (Indo Chinese) and Mexican dishes. One of his favourite Mexican dish is enchilada.

While I was thinking about valentine dishes to post my this week’s recipes in blogging marathon, the first thing that came to my mind was, enchiladas (since these are my valentine’s favourite ?).

For making these enchiladas, I used homemade whole wheat tortilla and enchilada sauce. I made filling with kidney beans, black eyed beans and corns.

Since we all like spice level a bit high, so to give my enchilada extra depth of flavour, I spiced them with cajon spice, paprika and chili flakes. All these spices undoubtedly gave extra kick to enchilada. If you are ultra sensitive to spice, you can omit it or reduce its amount to adjust according to your taste.

Instructions
For Enchilada Sauce
  1. In a pan, heat oil over medium heat. Add garlic, saute for couple of minutes.
  2. Stir in all purpose flour and cook for 1-2 minutes.
  3. Add tomato puree, tomato sauce, mixed herbs, salt and chili flakes. Cook it for few minutes till it gets slightly thickened.
For Filling
  1. In another saucepan, heat oil. Add cumin seeds and let them splutter.
  2. Add chopped onion and garlic. Saute for couple of minutes till onions turn translucent.
  3. Add tomato puree and let it cook for some time.
  4. Mix in bell pepper, corn and mixed beans.
  5. Add salt, paprika, cajun spice, chili flakes and mixed herbs. Mix and let the mixture cook for few more minutes.
  6. Slightly mash the beans with a potato masher and finally mix in cheese. Keep aside.
To Arrange Enchiladas
  1. Preheat oven at 180°C. Grease a baking pan. Pour some sauce at the bottom of the pan.
  2. Take tortilla, spoon some filling in one side of tortilla, sprinkle some grated cheese and roll the tortilla. Place it in the baking dish, with seam side down.
  3. Similarly roll other tortillas as well and place them tightly one after the other.
  4. Pour sauce all over the tortillas, sprinkle remaining cheese, top with sour cream and sliced olives.

  5. Bake in preheated oven until cheese melts and it become hot and bubbly.
  6. Sprinkle chili flakes and mixed herbs and enjoy hot.

  1. wow, so beautifully you decorated them with cheese. Looking perfect and mouthwatering recipe. Home made tortillla is great idea.

     
    1. I don’t like to use canned food and we don’t get black beans as such. So normally I use kidney beans but these mixed beans enchiladas were so good that I’m going to make them often now
