Khaike paan Banaras wala….I hope all of you must have listened to this song and tasted paan sometime or the other. Both are awesome, at least for me 😁. O ho, don’t take me wrong. It’s not that I’m addicted to paan. Yes, I like it’s taste and treat myself with it once in awhile.

Last year, I went to attend a wedding. There, they had different flavours of ice cream. I tasted few of them (I’m not a glutton, just had a spoon of few flavours each 😀). Out of all flavours, paan was the best. The very next day, I tried to make it. It was an immediate hit in the family, though I felt the flavour was too intense. Next time I made few changes and mellowed down the flavour. Since then, after vanilla, this is one ice cream that you can find most of the time in my fridge.

Since this week in blogging marathon, I’m with the theme ‘frozen food’, how can I forget to include my favourite ice cream. So here I’m with this ice cream, with full on paan flavour. I bet, no other flavour can be more idyllic than this. So make it and indulge in the deliciousness of my cherished dessert.

Instructions
  1. Take all the ingredients of paan flavour and blitz in a blender to make a fine paste. Keep aside.
  2. Bring milk to a boil and let it simmer on low flame till it reduces to almost half.
  3. Add granulated sugar and continue to stir till sugar dissolves completely.
  4. Dissolve cornflour in little milk to make a paste.
  5. Slowly add cornflour paste to the simmering milk with. Keep on stirring continuously so as to avoid burning of milk as the bottom.
  6. When it gets thickened, remove from fire and allow it to cool completely.
  7. Beat it well with a hand mixer or in a mixie.
  8. Pour in a container and keep in freezer till semi frozen.
  9. Keep cream in the fridge for about 2 hours to chill. Take out the chilled cream and beat it over ice. Add powdered sugar and beat again till fluffy. Keep in the fridge until use.
  10. Take out the semi frozen milk mixture. Beat it again till it becomes almost double due to aeration.
  11. Add few drops of green color, tutti frutti and paan mixture. Mix well to disperse everything uniformly.
  12. Fold in the cream gently.
  13. Pour in container and freeze for 6-8 hours.
  14. Enjoy your cool and delicious ice cream.
