Dhokla is a gujarati farsan/ snack which comes in number of varieties like dhokla, khaman dhokla, nylon dhokla, sandwich dhokla etc. With a little difference here and there, these different varieties can be produced. Basically dhokla is a steamed cake which is tempered to give the desired taste. Steaming can be done in a cooker, dhokla maker or in a microwave. I usually make dhokla in a microwave, as it gets ready very fast whereas in a steamer it takes comparatively longer.
Dhokla is an ultimate breakfast/snack/meal for everyone especially the ones who are very diet conscious. Moreover, serving it to the guests for breakfast or tea shows a good effort on your part even though it doesn’t take much to prepare this dish.
Khaman dhokla is prepared by mixing gram flour with curd and spice. It is then beaten well to incorporate air. Afterwards baking soda or eno is added that makes the batter to rise. Finally, it is steamed to get soft and fluffy khaman dhokla.
- Besan 1 cup
- Curd ½ cup
- Water ¼ cup
- Sugar 1 teaspoon
- Oil 1 tablespoon
- Turmeric a pinch
- Salt ¼ teaspoon
- Green chilli 1 teaspoon, chopped finely
- Ginger paste 1 teaspoon
- Eno salt 1 ½ teaspoon
- Oil 1 teaspoon
- Mustard seeds 1 teaspoon
- Sugar 2 teaspoons
- Sesame seeds 1 teaspoon
- Curry leaves 10-12
- Lemon Juice 1 tablespoon
- Green chillies 3-4, sliced
- Water 1/2 cup
- Coriander leaves to garnish
- Grated coconut to garnish
Take besan in a mixing bowl.
Mix with a whisker so that no lumps remain.
Add water to make a thick mixture, but of pouring consistency. Beat well to incorporate air. This helps in making softer dhokla.

Add oil to the mixture. This helps in making softer dhokla.
Cook in the microwave for 5-6 minutes. Insert a toothpick to check doneness. If it comes out clean, it means dhokla is cooked otherwise, cook it for another 30 seconds.
Let it cool and cut into pieces.
Take oil in a pan and heat it. Add mustard seeds. Once these start spluttering, add green chilies, curry leaves and sesame seeds and saute for a minute.
Add 1/2 cup of water and sugar and give it a boil. Add lemon juice in the mixture.
Pour the mixture over dhokla.
Serve with chutney of your choice.
