When it is preplanned then I make idli, dosa or uttapam from the fermented batter but when it is the sudden demand from my kids then I go for instant versions. In fact, I have more liking for instant versions as they take less time and no planning.
Today in the morning, when my daughter was getting ready for the school, she all of a sudden demanded uttapam. It was her cutlery day in the school when they are to bring those food items that can be eaten with fork and knife. So she wanted uttapam only. I readily agreed to that as it gives me a chance to feed her with variety of veggies (I put lot of veggies in my uttapam). Another reason was, my this week’s theme in blogging marathon i. e. ‘Instant Dishes’.

- 1 cup Rava/ Sooji
- ⅓ cup Curd
- 1 large onion chopped finely
- 1 large Capsicum chopped finely
- 2 Tomatoes seeded & chopped finely
- ¼ cup Coriander leaves chopped finely
- 2 Green chilies chopped finely
- ½ tsp Eno fruit salt
- Salt to taste
- 1 tbsp oil for shallow frying

- Take sooji, curd and salt in a mixing bowl.
- Add water and whisk to form a smooth and thick batter. Keep aside for 10-15 minutes.
- In the meanwhile, chop all the veggies.
- Add all the veggies in the batter, keeping some for topping.
- Mix well and adjust the consistency of the batter by adding water, if required. Sooji absorbs water on soaking, so consistency has to be adjusted.
- When ready to make uttapam, add eno fruit salt and mix well.
- Heat a non stick tawa over medium flame. Add few drops of oil and wipe with a tissue paper this helps in easy spread of batter.
- Reduce heat to low and pour the batter. Spread it in the form of a circle with the help of ladle. Sprinkle some veggies on the top and press with spatula.
- Increase the heat to medium again and let it cook on one side until the top stats drying up and colour changes to of white
- Drizzle some oil on the sides and top.
- Flip the side gently and let it cook on the other side as well for another 1-2 minutes.
- Flip again and cook for another couple of minutes, if you like crisp bottom, otherwise remove it from the pan.
- Repeat the same for other Rava Uttapam.
- Serve hot with chutney or tomato sauce.

ooooooooh! what a lovely idea to make uttapams from rawa batter…..never thought of it before. definitely a recipe to try during those ‘lazy to cook’ days!
Colourful and attractive looking uttapam . These sooji uttapams have always won my heart and I too used to make these often .. though it seems like a forgotten recipe in my kitchen .

I make this instant rava uttapam often. It comes very handy on busy mornings. I do add a little chickpea flour to the batter which helps in binding.lovely share !
