I, being very fond of milk, love to see lot of milk in my fridge. My fridge is always stocked with at least 8 titres of milk. Sometimes it exceeds even more. Those are the days when I need to think of the ways of utilizing them in ways other than making curd or paneer. My kids are just opposite of me, run away from the milk. But they do like the dishes made from milk, dessert lovers you know….
Yesterday, I had three pots full of milk. So it was a day to make some dessert. My kids had been asking for rasmalai for a few days. I wanted to make it but had no time. Last few days I had baked a number of cakes and now my kids were tired of eating all those bakes. So I thought of using those cakes to make my instant rasmalai.
Instant cake rasmalai is very easy to make. Your have to condense milk to make rabdi. Cut the circles from the sponge cake and soak them in rabdi. Chill and enjoy cake rasmalai.
