Khumbh makhana curry-an easy yet scrumptious curry recipe that can be a perfect party food.

When mushrooms are in season, I make sure that they are made at least once a week. Since my whole family is not fond of mushrooms, so I generally make it as a side dish. But to me mushrooms are the star ingredient.

This week I’m participating in blogging marathon with mushroom as my ingredient. After posting a starter (Mushroom Crostini) and a soup, the next in the row is main course dish. Last week, I bought a big pack of lotus seeds/ makhana and was looking for the ways to utilizing them. Since mushrooms and lotus seeds both are having a number of health benefits. So I paired mushroom and makhana to make this lip smacking curry i.e. khumbh makhana curry. It goes well with roti, naan, paratha or rice. Here is the recipe for this delicious curry.

Mushroom Makhana Curry
Instructions
  1. Dry roast Lotus seeds till light brown. Keep aside.
  2. Wash mushroom and slice them. Keep aside.

  3. Heat oil in a pan. Put cumin seeds and let them splutter. Add chopped onion, ginger and garlic paste.

  4. Saute till onions turn translucent.

  5. Add tomato puree. Stir and let it cook for couple of minutes.
  6. Add turmeric powder, chilli powder, coriander powder, cinnamon, cardamom powder and salt. Stir and saute for few minutes.

  7. Add ½ cup of water, stir and let it cook on low flame till the oil separates.
  8. Add sliced mushrooms. Stir and let it cook covered for 5 minutes.

  9. Add fresh cream or malai and stir well.

  10. Next add roasted Lotus seeds and half cup of water.

  11. Stir and let it simmer on low flame for 15 -20 minutes.

  12. Mushroom makhana curry is ready.

  13. Lastly add garam masala and chopped coriander leaves. Serve hot with roti, paratha, naan or rice.
