Koki roti….a Sindhi masaledar roti is not just a roti, but an amalgamation of different flavours and  lies somewhere between a roti, paratha or a crisp biscuit.

Since I’m running a mega marathon under the theme A to Z Indian Flatbreads, for other letters I had to think about a flatbread that I’ll be making. But for letter K, I was determined from the beginning that I’ll be making koki roti only.

The reason of my being so decisive about koki roti was, this roti being almost similar to my family favourite onion paratha with only minor differences like, koki roti is made using lots of desi ghee, is thick and crispier whereas onion paratha is a soft paratha. So this koki roti is made occasionally for a special treat whereas onion paratha is regular at my home when I’m not in a mood to make stuffed paratha.

I served this roti with some fried papads, pickle, butter and mango shake.

Instructions
  1. Take whole wheat flour, besan, red chilli powder, cumin seeds, carom seeds and salt in a bowl. Mix well.

  2. Add desi ghee and rub with your fingers.

  3. Add chopped onion, green chillies and coriander leaves.

  4. Add warm water little at a time to knead a soft dough. The dough well be stick as we have added besan to it. So apply some more ghee and smoothen the dough.

  5. Divide the dough into 8 parts and make balls. Take a ball and shape it in the form of a thick chapati. Make holes by poking with a fork or knife.
  6. Transfer to the hot griddle and apply some ghee.
  7. Flip the side when slightly browned and apply more ghee. Cook on low flame by flipping sides and applying ghee generously till thoroughly cooked and crisp.
  8. Serve hot!

  1. Masala Koki is a regular feature at home , it’s normally made for breakfast . You have made a perfect Koki with perfect spices and herbs , roasted it to perfection . Serving it with so many accompaniments must have been a treat .
