If you go to a restaurant to dine and going to order Indian food, one thing that will surely be on your table is, naan. You will see a variety of naan on the menu card sada naan, butter naan, stuffed naan and garlic naan to make a few.

Garlic naan

Naan is a leavened Indian flatbread. It can be made in tandoor, oven or on griddle. To leaven naan, generally yeast is used but leavening can also be done by using curd. Today, I’m going to tell you how to make naan using curd and I have made this naan on Griddle/tawa.

Today is the 12th day of Mega Marathon that I’m taking part in with the theme A to Z Indian flatbreads. Since today’s letter is ‘L’, so I have made ‘Lehsunia Naan/Garlic Naan’

Instructions
  1. In a bowl mix maida and salt.
  2. Add baking soda and curd. There will be bubble formation in curd indicating that baking soda had started its action. Mix it well with the flour.
  3. Add 1 tsp of oil and knead into a smooth dough using warm water. The dough should neither be too soft nor too stiff
  4. Make a ball of dough and place in a greased bowl. Cover and keep in warm place for 3-4 hours till it rises, though It won't become double in volume.
  5. Punch out the dough and divide into 4 parts.
  6. Take a portion of the naan dough and dust it in the maida/all-purpose flour. Roll it out into an oval shape.
  7. Now apply some water on naan and sprinkle some minced garlic and chopped coriander leaves over the naan and roll it once.
  8. Carefully lift the naan and flip it. Apply some water and place it on the hot tawa, wet side down. This will make the naan stick to the tawa.
  9. Let the naan cook over low heat for few seconds till some bubbles start forming on top.
  10. Now pick the tawa and turn it upside down. Turn up the heat and cook the top of the naan over direct heat. Keep some distance between the naan and the fire.
  11. Move the tawa over the fire so that the entire naan gets uniformly cooked.
  12. Scrap the naan off the tawa with a metal spatula. Garlic naan is ready.
  13. Apply some butter on the top and serve hot!

  2. My friend was just telling me this process of putting the wet side of the rolled dough on the hot tawa. Apparently it was a comin thing when they were growing up. The naans have come out very well .

  5. Rightly said, Naan is indeed a must have accompaniment to curries when we go to a restaurant. There can’t be a better thing than to make it at home and enjoy it in a hygienic way. I too often prepare these in a similar manner and trust me, they are always in demand especially on weekends. Needless to say, yours have come out perfectly with that awesome texture which is making me drool right at the moment. Must say, a fabulous share.

  9. Your pictures are so tempting. You have got them made so well. Fantastic choice and though I love garlic very much, I don’t always order this while dining out…but I do make it at home…wonderful platter! and with that paneer it must have tasted awesome.
