Long back, when my son was a young kid and daughter was a toddler, my sister visited us from USA. Along with so many other things, she also brought some ready to make food packs. One of the food pack that she brought was Mac Cheese. Though I didn’t like it’s taste due to it being too cheesy and a bland taste for me. But for kids, it was a treat. They just loved its taste.

Soon after, the packets got finished and my kids started demanding for Mac cheese. At that time, it was not easily available in the market, at least in my city.

I made it to please them. My daughter was ok with it, but my son, who needs the perfection in a dish was not that much satisfied. I made it n number of times til it reached to his level of perfection.

When they were kids, they didn’t like any stuff in their Mac and cheese. With time, their tastes and preferences have changed. Now both of my kids want their Mac cheese to be a bit spicy and with some veggies. What more a mother can want if her kids are demanding for veggies. So, I being the happy mother, put whatever veggies are available like peas, corns, caramelized onions,mushroom, bell pepper etc to make healthy Mac cheese.

Here is my version of Mac cheese that I can assure you, will fill you up and satisfy you to the core, no matter how old you happen to be 😊😊

PS: Even my darling Piku loves to have it (though we don’t give him cheese frequently, but occasional treats are fine 🙂 )

Instructions
  1. Boil elbow macaroni according to package instructions. Drain and keep aside.
  2. Melt 1 tbsp of butter in a pan. Stir in bread crumbs and toss till little brown and crunchy. Keep aside.
  3. In a pan over medium heat, melt 1 tbsp of butter and stir in all purpose flour, garlic powder, salt and pepper. Cook for 2-3 minutes. Add milk slowly with constant whisking to avoid lump formation.
  4. The sauce will start thickening. Add all the the cheese and stir to mix. The cheese will melt, thickening the sauce further. Mix in all the blanched vegetables and boiled macaroni.
  5. Transfer to a baking dish. Top evenly with butter breadcrumb mixture. Sprinkle some paprika on the top.

  6. Bake in preheated oven at 200C for 15-20 min till the top is golden brown.

  7. Serve Mac n Cheese hot.
