Small is always beautiful. Even according to science we are more drawn towards small things whether these are babies, puppies or kittens. We tend to like even the scariest animal like lion when it is a baby.

When there is so much liking for small things then why not to make smaller i.e mini version of standard sized food. This week my theme in blogging marathon is ‘Mini dishes’. So along with mini muffins that I posted yesterday, I made mini idlis for my daughter and her friends.

I made three types of instant rava idlis- white cauliflower idli in which I used cauliflower paste, orange carrot idli with carrot paste and green spinach idli. The girls didn’t realise what is inside idlis and ate those mini veggie idlis with such a fervour that only few were left for me to taste.

Instructions
  1. Boil 2 florets of cauliflower and 1 chopped carrot. Keep aside to cool.
  2. Grind cauliflower florets to form a smooth puree. If need add little water.
  3. Grind boiled carrot to form paste. Keep aside.
  4. Wash and blanch spinach. Grind to form puree. Keep aside.
  5. In a bowl, take all the ingredients of cauliflower idli except baking powder. Mix well and keep aside for 10 minutes.
  6. After 10 minutes, check the consistency of batter. If need be, add more water. It should have pouring consistency.
  7. Add baking soda in it and mix well.
  8. Put a spoon of the batter in each cavity of small idli mould.
  9. Steam in a microwave for 2.30 minutes.
  10. Let the idlis cool on counter for 2-3 minutes. De mould the idlis.
  11. Similarly prepare carrot idli and spinach idli.
  12. Serve hot with coconut chutney or peanut chutney.

  1. Love these veggie twist idlis, Ritu. They look colorful besides being more healthier. I love how you have used cauliflower even for the white ones. To maintain the nutrition profile, I guess.

  2. Such a colorful platter Ritu! I am sure this will be loved by all. My kids too prefer mini idlis to regular ones but sadly only the white ones are their choice.They enjoy the colored ones very rarely!
