When kids ask for something to snack on and nothing comes to my mind, I usually make appam. This is for two reasons mainly. One is, all the ingredients are always there in the kitchen and another is, the ease with which it can be made.
These are so versatile that even if some ingredient is not there, I make with something else.
Today for her tiffin, my daughter wanted to take some snack for her friends along with the food that she has to take according to her food schedule. I readily agreed to her request. I made appam for her and her friends. That way I could make my daughter happy and at the same time I got some clicks for my today’s post.
For the last two days under ‘Instant dishes’, I had posted Tamatar Pyaz Ki Sabzi and Instant Rava Uttapam and today’s Mixed Veg Besan Sooji Appam go for the third day.
I had already shared rava appam on my blog, so this time I made appam using besan, sooji and rice flour along with mixed veggies. These appam are undoubtedly healthier than regular rava appam and taste just amazing.

- ½ cup Besan/ chickpeaflour
- ¼ cup Rava/ Sooji
- ¼ cup rice flour
- ¼ cup Curd
- ½ tsp Ginger grated
- ½ onion chopped finely
- 1 Carrot grated
- 1 Capsicum chopped finely
- 2-3 Green chilies chopped finely
- 1 tbsp Coriander leaves chopped
- ¼ tsp turmeric powder
- Salt to taste
- ½ tsp Eno fruit salt
- 2 tbsp oil

- Mix besan, sooji and rice flour in a bowl.
- Add curd and water to form a thick batter. Whisk it well for 2-3 minutes and keep aside for 5-7 minutes.
- To the batter, add salt, turmeric powder, 1 tbsp oil and all the veggies. Mix well.
- Keep appam pan on gas stove at medium heat. Grease all the cavities lightly with oil.
- Add eno fruit salt to the batter and mix well.
- Reduce the heat and drop spoon full of batter in each cavity
- Cover with lid and let appe cook on low heat for 3-4 minutes. Put few drops of oil on each appam and flip the side.
- Let them cook on the other side as well.
- Serve hot with chutney or tomato ketchup
