I’m not a salad person means I don’t make too many salads just simple routine salads except when some guests are visiting.

This week, when I signed for blogging marathon, I deliberately took salad as the theme as I wanted to explore salads.

For the first two days, I had those salads in my mind that I wanted to make as I make them regularly at home. I needed some salad for the third day. So I started looking for salads what Caprese salad caught my attention.

Caprese salad is an Italian salad in which fresh mozzarella, tomatoes and basil are seasoned with salt and olive oil.Ga

Mozzarella is no problem, but getting fresh mozzarella is surely a problem so rather than making Italian Caprese salad, I decided to give it an Indian touch.

To make my today’s salad, I used fresh cottage cheese, tomato and coriander along with simple Indian seasonings like red chilli powder, chat masala, pepper, salt lemon juice. I  gave vertical cuts in tomatoes just like we do in hasselback potatoes and inserted marinated cheese slice between each cut. The salad looked so beautiful that my daughter, who is a tomato hater, couldn’t stop herself from eating it.

Mock Caprese Salad
Instructions
  1. Cut roundels of cottage cheese with the help of a cookie cutter.
  2. Take these roundels in a bowl. Sprinkle some red chilli powder, pepper, chat masala, salt and chopped coriander. Squeeze juice of half lemon. Mix everything gently so as to coat each paneer piece. Keep aside for at least half an hour.
  3. Make vertical cuts in the tomatoes, just like we do in hasselback potato.
  4. Insert a slice of cottage cheese and coriander leaf between each cut.
  5. Sprinkle some salt and pepper on top and serve.
