To all the other thing, one thing that I like most about winters is the variety of vegetables that flock the market carrots, peas, turnips, saag and mushrooms etc.

I love to see my fridge stocked well with all the veggies. In fact I buy things more than required. Keeping up with my (bad) habit, I bought 2 more packets of mushroom when 1 packet was already there in my fridge. This bulk buying puts a pressure on me to cook them before they get spoiled. Now those 3 packets of mushroom were to be used. I made mushroom matar and mushroom soup with them, still 1 packet was left.

My kids have been demanding for some snacks. I had some paneer lying in my fridge, so I decided to make paneer tikka and mushroom tikka. My whole family (to my surprise my MIL and FIL, who don’t eat mushrooms otherwise) liked it and I’m sure even you’ll like/love it.

So, don’t think, just make and enjoy before mushrooms disappear from the market.

Instructions
  1. Wash and wipe mushroom to clear off all the dirt. Trim the end of mushroom stalks.
  2. Take all the mushrooms in a big mixing bowl and add all the ingredients except besan. Mix well. Let it marinate for ½ to 1 hour.
  3. Dip the wooden skewers in water for 5-10 minutes. This helps to prevent them from burning during grilling. Take out the skewers and wipe them properly.
  4. To the marinated mushrooms, add besan and mix well.
  5. Line a baking tray with tin foil. Arrange the mushrooms on skewers and place the skewers on the baking tray.

  6. Grill in a preheated oven at 200°C for 10 minutes, turn over the sides and grill again for another 10 minutes
  7. Mushroom tikka is ready.

  8. Sprinkle some lemon juice over it and serve with onion rings and mint yogurt dip.
