Whenever we go for grocery shopping, if my husband is along, one thing that is sure to be in my shopping cart is ‘nice biscuits’. He is so fond of these biscuits that can’t miss them with tea. So, even if I go alone, I make a point to show some nicety by buying nice biscuits for him😉.

This month I’m too much into baking, courtesy to Valli, who has given us a month long theme ‘ABC Around the world’. Everyday I look for one bake or the other. Some I know already, for some I have to search some books or google. While searching for various cookies around the world, my eyes feil on nice biscuits. How can I miss the chance of pleasing my husband by feeding him with homemade nice biscuits. So immediately decided to make them. To my relief, they came out super in the first attempt itself. So without any experimentation/ modification, this recipe was a hit.

English Nice Biscuit

Prep Time: 15 min                           Cooking Time: 20 min                           Makes: 52 biscuits


Ingredients for Nice Biscuits

Desiccated coconut 50 grams
All purpose flour 200 grams
Corn flour
100 grams
Powdered sugar 110 grams
Butter
225 grams
Granulated sugar 2 tbsp

Method:

Mix together flour, corn flour and dedicated coconut. Keep aside.

Cream butter and powdered sugar until light and fluffy.

Add flour mixture to creamed butter and make a dough.

Chill the dough for half an hour in refrigerator.

Roll out the dough to a thin sheet and cut out biscuits in rectangular shape.

Arrange the biscuits on a baking tray.

Sprinkle some granulated sugar on the biscuits and bake in preheated oven at 160 C for about 20 minutes.
