Nutty cauliflower Hummus is a creamy Ketogenic dip that can be enjoyed with nachos, crackers or you can simply slather it on bread slice to make a delicious Sandwich. If not anything else, I love to have it as such without any accompaniment.

My theme for blogging marathon this week is ‘Dips for Snacks’. When Valli announced the themes last month, I immediately decided to take this theme and also to do Roundup. There was a reason for my eagerness to take this theme. I’m the type of person who is not much into making dips. When it comes to making dips, I end up making coriander chutney or coriander mint chutney. I make couple of other dips but only on special occasions.

By now you must have understood my reason for taking up this theme. Not only my family will get to enjoy some special dips but it will also add to the meagre list of dips that are there on my space.

To make this Cauliflower Hummus, I roasted cauliflower florets in air fryer. If you don’t have air fryer, you can roast in an oven as well. Only the roasting part takes time , rest is just simple grinding and you get a delicious and healthy dip.

Instructions
  1. Wash cauliflower florets well and keep then on a kitchen towel to drain well.
  2. Apply about ½ tbsp of olive oil on the florets and air fry them in an air fryer for 10 minutes at 180°C or in an oven at 200 for 20 to 25 minutes till slightly golden brown.
  3. Take out on a plate and let them cool.
  4. Lightly roast sesame seeds and almonds. Keep aside to cool.
  5. Transfer all the ingredients along with cauliflower in a blender jar and grind it to form a smooth paste. Add water to adjust consistency you want.
  6. Check the seasoning and adjust.
  7. Serve this dip with nachos, crackers or simply spread it on bread to make sandwiches
