Whenever there are holidays kid’s demands increase as far as food is concerned. They are not ready to eat routine food and want to be treated with the something special all the time.

These days autumn breaks are going on, that means I have to devote more hours in the kitchen fulfilling their demands. More than the work, the difficult part for me is to decide what to make.

Since pasta is kid’s all time favourite, so if nothing comes to mind, I make pasta in one form or other. They like it, in fact love it in whatever form it is.

Today was the same day, indecisive me… Finding it difficult to decide what to make for the notorious gang of my daughter and her friends. When I looked into the vegetable basket, couldn’t find anything except for the lone capsicum begging me to use it. Immediately I decided to make cheesy pasta Alfredo.

Instructions
  1. Cook pasta in boiling water until it becomes tender. Drain and keep aside.
  2. Heat oil in a pan over medium heat. Add onion and garlic. Saute till onion turn translucent.
  3. Add capsicum and saute for 2 minutes.
  4. Add flour and stir to combine. Cook for 1-2 minutes.
  5. Slowly add milk with constant stirring to avoid formation of lumps. Add torn basil leaves and continue cooking till the sauce gets thickened.
  6. Add salt, pepper, chilli flakes and minced herbs.
  7. Stir in cheese and pasta.
  8. Serve hot.
