Shakarkand ke ladoo – shakarkand is known as sweet potato in English.

Navratri are going on. Navratra time means… Making delicious treats. Infact I call navratras not as fasting time but a feasting time.

My daughter is so fond of navratri dishes that this time she decided to keep fast. Actually she wanted to have an excuse for not taking her tiffin according to menu fixed by teacher. Kids you know… Little things make them happy.

Today I made these shakarkand ke laddoos for her tiffin. These are very easy and quick to make and healthy too.

I used just 2 tablespoon of ghee to cook potatoes and instead of sugar, added khandsari sugar, which is unrefined sugar. It is full of minerals and is healthier than refined sugar. Moreover, I just added ⅓ cup of sugar, so the laddoos were mildly sweet. All in all, I can say, it is a tasty and healthy sweet that can be enjoyed during Navratri or otherwise also.

Instructions
  1. Boil, peel and mash/grate sweet potato so that no lumps are there.
  2. Heat ghee in a heavy bottomed pan.
  3. Add sweet potato and roast it till there is slight change in colour.
  4. Add grated coconut, cardamom powder and desi khand.
  5. Mix well and turn off the flame.
  6. Let it cool completely and roll into laddoos
Recipe Notes
  • You can increase the amount of ghee to 1/2 cup, if you don't have any calorie issue.
  • You can use normal powdered white sugar or jaggery in place of khandsari sugar.
  • Addition of nuts like cashew, almonds etc. will definitely enhance the taste.
