Sloppy Joe, tangy n spicy, a bit messy though but make a delicious and quick meal that the whole family can enjoy.

Sloppy Joe is a sandwich or a burger but unlike burger, it doesn’t have a patty inside. Traditionally it is made from ground beef cooked with a tangy tomato sauce and served on a burger bun.

This week, I’m taking part in blogging marathon with USA based dishes. Since sloppy Joe was originated in US in 20th century, so this is my entry for 2nd day. For the !st day, I had made Hash Browns

I have made a vegan version of sloppy Joe. Normally lentils or TVP are used in vegan sloppy Joe, but I have made my sloppy Joe with black eyed bean. My kids don’t like black eyed beans, but in this sandwich, they just relished it. We had it for dinner. Not only this, whatever filling was left, that I used next day to make veg roll. My daughter happily took it in her tiffin as she had pulses in her menu for the day.

Instructions
  1. Soak 1 cup black eyed beans over night. Drain water and boil with fresh water for upto 3 whistles in pressure cooker. Release the pressure. It should not get mushy
  2. Heat oil in a pan, add chopped onion and ginger. Fry till onion gets translucent.
  3. Add tomato puree and chopped capsicum. Cook till the raw taste of tomato is gone.
  4. Add tomato sauce, soy sauce, sugar, paprika garlic powder and salt. Cook for couple of minutes.
  5. Add boiled beans and ¼ cup of water. Let it simmer for 5-6 minutes on low flame.
  6. Mash beans with a potato masher. Taste the filling and adjust the seasoning or sauces according to your taste.

  7. Lightly toast burger buns. Place filling on the bun. Top with julienned purple cabbage, carrot and pickled jalapenos.
