Hasselback potatoes, to me this was something new, still I didn’t want to try it. What’s in that makes me not to try it?? Probably potatoes, since I’m not fond of potatoes… may be. But once I made them, I was surprised with the taste. They are so delicious and addictive that a person like me, who has aversion to potatoes, couldn’t stop at one.

Hasselback potatoes are a Swedish version of baked potatoes. It’s named after Hasselbacken restaurant in Stockholm, Sweden.

On children’s day, my daughter and all her friends decided to hold a get together.  Parties are incomplete without food, so they decided to bring one food item each. My daughter wanted me to make something that I haven’t made before.

Kid’s love for potatoes is well known, so I wanted to make some potato dish. It reminded me of hasselback potatoes that I had made few days back. My daughter also loved the idea as she was fascinated with the look of these fan shaped baked potatoes. When she took them to the party with cilantro lime yogurt dip, all the kids loved them and they were gone in minutes.

Since I’m running this week’s blogging marathon with the theme birthday party snacks, so I considered it appropriate to include Hasselback potatoes in the list. These easy to prepare baked potatoes have another good point about them that they can be prepared ahead of the party and can be re baked for few minutes before serving.

Instructions
  1. Heat oven to 200C.
  2. Wash potatoes well to remove all the dirty from them.
  3. Place on a cutting board or any surface with two chopsticks, one on each side of potato.
  4. Cut slits through the potato about 4mm apart until it hits the chopstick. This easy, we can avoid cutting through the potatoes.
  5. Drizzle oil all over the potatoes. Sprinkle generously with salt and freshly ground pepper.
  6. Places then on a baking tray and bake in a preheated oven at 200C for 45 minutes.
  7. Remove from oven and serve hot with a dip of your choice. I served it with cilantro lime yogurt dip.
