Kulfi is an all time favourite Indian frozen dense dessert.

If it’s a fasting time, it doesn’t mean we will be deprived of this delicious dessert. Only thing is, we need to make a kulfi that fits into navratra meal.

Sia, my daughter, is very fond of ice creams and loves to have them after the meal. Infact, she gulps down most of the ice cream that I make and I have to scold her due to so much of sugar intake.

Since this Navratri, She is also keeping fast (though for the sake of eating all that delicious meal 😁), I don’t want her to long for the things that her brother is enjoying.

Few days back, I had made cabbage kulfi. My kids couldn’t make out that it contained cabbage. Since sweet potato is allowed during Navratri, this gave me an idea to make kulfi with sweet potato.

I made kulfi with sweet potato. It was as delicious as is the normal kulfi we make.

Sweet potato kulfi
Instructions
  1. Heat milk in a heavy bottomed pan and let it come to a boil.
  2. Add sliced sweet potato and let it simmer till the potatoes get cooked thoroughly and milk is reduced to half.
  3. Add sugar and cardamom. Cook till sugar gets dissolved. Take off the flame.
  4. Let it cool then blitz with a blender to remove any lump. It should be smooth.
  5. Add cashew and fill in kulfi molds.
  6. Keep in freezer for 6-8 hours till completely frozen.
  7. Demold and enjoy.
