Dessert is a necessity for my sweet loving family, especially on Sundays. Rest of the days they can at least survive without it but not on Sundays?. Out of all the desserts that I make, Vermicelli is one such dessert that is close to my heart. This simple and tasteful dessert is made in almost all Indian homes. You do not need any special occasion to make this delightful dessert. Whenever some sudden guest arrive or you are short of time, this easy and scrumptious dessert comes to a rescue. Moreover, it is also made during festival like Ramadan, Diwali etc.
Vermicelli or meethi seviyan can be made with milk or with condensed milk or without milk. Addition of loads of dry fruits or spices like saffron or cardamom enhances its taste and flavor many folds.

Sweet Vermicelli Without Milk
This super easy and scrumptious sweet vermicelli loaded with dry fruits makes a quick fix when you are running short of time.
In a pan take 1 tablespoon of ghee and heat it.
Fry nuts in it and keep aside.
In the same pan, add rest of the ghee and add vermicelli.
Fry vermicelli on medium heat, stirring constantly till golden brown for 2-3 minutes.
Carefully pour hot water into the pan with vermicelli. Stir and bring it to boil. Lower the heat, cover the pan and let it cook till softened.
When about half of the water dries up, add sugar and cardamom powder and stir gently.
When it comes to semi dry consistency i.e. little bit of water is still there, take off the flame
Add fried nuts and raisin and serve hot./cold.
