Tandoori Aloo Paratha In Cooker

Tandoori Aloo Paratha, this is what I made this Sunday. Normally my Sunday brunch is something fried like Poori with aloo or Bhature with chana, but this Sunday, I made tandoori aloo paratha. Now why this change in menu….the reason is simple. These days my home menu is governed by mega marathon, I’m taking part into :). Since this is a theme based marathon and my theme for this month long mega marathon is ‘A to Z Indian Flatbreads’, so I cook alphabetically 😀 .

‘T’ being the letter for 20th day, in spite of having many options like taftan, tikkar roti, thepla, tchot etc, I was in search of something that is not new to my family (as on Sunday, I can’t experiment with their tastes 🙂 especially for mom and dad). Then I thought of making tandoori roti. To give it a special Sunday touch, I decided to make Tandoori aloo paratha. Otherwise also, I hadn’t made tandoori aloo paratha for a while. So when I laid these parathas on table, I could see every body enjoying them with butter or curd.

Though I have a gas tandoor, I prefer to make my tandoori roti or paratha in cooker itself. No, it’s not like that you can’t make them in gas tandoor, but this is just my lazy side only. Ifind it hasslesome to take out gas tandoor, clean it and after cooking again clean and keep inside. So if you have gas tandoor or electric tandoor, feel free to use it to make this tandoori aloo paratha.

Instructions
  1. Take the ingredients of dough in a bowl and knead a smooth and soft chapati dough using water as required. Apply oil and keep aside for 15 minutes.
  2. In another bowl, take all the ingredients of filling and mix well. Check seasoning and adjust according to your taste.
  3. Divide the filling into 10 equal parts and make balls.
  4. Take a ball of dough, roll it into a small disc of about 3 inch diameter. Place a ball of filling in the centre and fold the sides to seal the edges.

  5. Dust with flour and roll into a circular disc of 5-6 inches, taking care that filling should not come out. It should be thicker than chapati.

  6. Similarly make all the chapatis and keep aside.
  7. Heat a 5 litre cooker on high flame. Keep this in mind that cooker has to be really hot before you paste the chapati on it. It will take approximately 2-3 minutes on high flame to get hot.
  8. Apply water on one side of stuffed paratha with your fingers. It will help in sticking of paratha to cooker.

  9. When the cooker is sufficiently hot, stick paratha on the side of cooker wearing hand gloves. You can stick 3-4 parathas at a time.

  10. Invert the cooker and let the parathas cook till light golden brown on the exposed side. In between expose it to heat on the sides as well so that lower side of paratha also get cooked. When almost cooked, it will start leaving the side.

  11. Remove it with a tong and lightly cook on both sides in open flame, if required.

  12. Brush with butter or ghee .
  13. Lightly crush it with your hands and serve hot with butter, curd or chutney

  2. Yes these tandoori parathas made in cooker taste amazing , I learnt making these perhaps 20 years back and ever since I am hooked on these .
    Your parathas have come out super crisp and the stuffing sounds delicious , typical Punjab da khana . Amazing !

  3. Most of the times our meal is based on BM themes and my family eps the kids are so much aware of it. I too don’t experiment on the parents meal and that is reserved for the rest of the family!Nice job make tandoori Roti using the pressure cooker! They have turned out so well Ritu.
