My son is at home these days. He and his never ending demands for something good (till date I’m not able to figure it out, what is that something good). A difficult to please person as far as food is concerned and a big critic, at one time this is good and at other time something else is good.

All of a sudden he starts craving for something and then is after me for that. Now his latest craving is something chocolatey, but not the cake. Chocolate ice cream and brownies were lying in fridge, but he doesn’t want either of them too. Only option that came to my mind at that time was to make chocolate for him. So I decided to make chocolate fudge for him.

Unibic Cashew Chocolate Fudge

Few days back, one of my blogger friend Parvathy Rakesh from RecipeBook & RecipeBlog asked me to participate in Unibic cookie contest and today being the last day of the contest, I wanted to make something with those delicious cookies. What could be better than to add these cookies to have some crunch in my chocolate fudge. Since I used cashew cookies, so added some cashew to my fudge also to give it added crunch.

So here is my crunchy & chewy Unibic Cashew Chocolate Fudge.

Unibic Cashew Chocolate Fudge
Instructions
  1. Line a square or rectangular tin with butter paper. Keep aside.
  2. Roast and chop cashew and keep aside.
  3. Break cookies into small pieces
  4. Combine condensed milk and butter in a microwave proof bowl.
  5. Microwave it for 1 minutes and stir to mix butter and condensed milk.
  6. Add chopped chocolate to the mixture and mix it well till the whole chocolates melts and forms a smooth mixture. Microwave for 15-30 sec, if need be.
  7. Add cashew and unibic cookies. Stir to combine well.
  8. Tip into prepared tin and spread the mixture uniformly. Chill for 2 hours.
  9. Take out of the tin, when set, peel off the butter paper and cut into squares.

Recipe Notes

If you can't wait for the fudge to set and have intense chocolate/sugar craving, just keep it in freezer for 10-15 minutes and cut into pieces
