Upwas ka paratha, a paratha made with Sama rice flour is not only delicious but is healthy too.
Sama rice also known as Barnyard millet, samvat or swang is a popular ingredient consumed during fasting days like Navratri, janmashtami, ekadashi etc. It is a gluten free and healthy, so it’s usage is not restricted to fasting days only, but weight watchers can also include it in their diet.
In this upwas ka paratha, Sama rice flour is mixed with lots of boiled potato which acts as a binding agent. Carrot is added to increase the nutrition quotient. Coriander leaves and certain simple spices are added to increase the taste of paratha.
For the better binding, I have used freshly boiled hot potatoes and grated them. Freshly boiled potatoes are a bit sticky that helps to bind the flour well without any addition of water.
This upwas ka paratha goes for my today’s entry in mega marathon under theme ‘A to Z Indian Flatbreads’. Since today is 21st day of mega marathon, so for letter ‘U’ my Upwas Ka Paratha.
