Veg Szechuan Noodles Recipe

Whenever we talk of chinese or more appropriately, Indo chinese cuisine, we can’t miss out noodles. There are variety of ways in which noodles can be made like hakka noodles, egg noodles, veg noodles etc. If you want a spicier version of noodles, then there are szechuan noodles. They are very simple to make, just like normal veg noodles. Only difference is that here we use szechuan sauce instead of soy sauce, which is quite a spicy sauce. Spicy szechuan noodles is a popular street food in India, that is enjoyed by all.

You can use homemade or store bought sauce. The amount of sauce can also be varied depending upon the hotness of the noodles you can tolerate 🙂 The veggies can also be varied according to your choice. These can be cut into julienne or chopped. So I can say that whole preparation is according to personal likings.

Prep Time: 15 min             Cooking Time: 20 min         Serves: 4


Ingredients

Noodles
1 packet / 150 gms
Carrot
2, cut into julienne
Beans1 cup, chopped finely
Capsicum 1, sliced thinly
Garlic
1 teaspoon, chopped
Schezwan sauce
2 tablespoons
Onion 1 medium, chopped
Pepper powder½ teaspoon
Vinegar
1 tablespoon
Oil
2 +1 tablespoon
Saltto taste

Method:

  1. Boil noodles as per packet instructions. Once done, drain and keep it aside.
  2. When the noodles are just about done, i.e. al dante, drain and run through cold water. This stops the further cooking.
  3. Add 1 tablespoon oil on the noodles and toss well to coat the noodles with oil.  This prevents sticking of noodles.
  4. Heat 2 tablespoons of oil in a wok. Add onion and garlic, saute on high heat till onions just turn translucent.
  5. Add carrots and beans, stir fry on high flame till cooked but crunchiness is retained.
  6. Finally add capsicum and give a quick stir.
  7. Add salt, pepper and szechuan sauce. Saute and cook for 2-3 minutes.
  8. Finally add boiled noodles and toss well to coat the noodles with sauce and veggies
  9. Add vinegar and mix well. Check the seasoning and adjust according to your taste.
  10. Serve hot.
