My daughter had English paper today. When she came back from the school, I was in the kitchen. Immediately she started jumping. I thought this is her way to show that hey exam went well, but you know why was she jumping…… At the sight of my today’s flatbread that I was making at that time.

Now what was so special in that?? It had kids favourite vermicelli noodles in it. Today, 22nd day of mega marathon and the 22nd letter is ‘V’.

Since I wanted to make some traditional flatbread so my initial choice was Vastad roti. I was ready with my clicks but had not written the post. By the time I saw two of my BM friends had posted Vastad roti, so decided to make something else. These pics can remain in my draft folder to be posted some other time.

Now was the time to rack my brain for some quick option. V v v v…My brain was doing this only. Veena, vinegar, veggies, Visakhapatnam, Varanasi, vermicelli…. Yes, vermicelli. I’m going to make stuffed paratha with vermicelli. When noodle samosa could be there, why not vermicelli paratha? I should give it a try. If it didn’t go well, I have Vastad roti by my side in any case. This is how Vermicelli paratha came into existence 😊. Since this paratha is inspired from noodle samosa, so I gave it a triangular look and made Vermicelli Pocket Paratha.

For making vermicelli pocket paratha, first I made layered triangular paratha, half cooked it on hot griddle, opened its one of the layer, filled it with spicy vermicelli filling and again sealed it lightly by applying little water. Finally cooked it on griddle at low flame by applying oil till it became golden and crisp from both sides. Believe me it was so yum that what to say of my daughter, I myself couldn’t resist it and ate 1 ½ paratha (vaise I’m on diet 😁😂, that’s a joke actually)

  1. Take whole wheat flour, salt and oil in a bowl. Knead a smooth and soft dough by using water. Keep aside for 15 minutes.
  2. Boil vermicelli for 1-2 minutes till softened but not fully cooked. Drain and keep aside to cool.
  3. When cooled, take vermicelli noodles and rest of the filling ingredients in a bowl and mix well.
  4. Divide the dough into 4 parts, same is with the filling.
  5. Take one part of the dough and roll into a big circle.
  6. Apply ghee/oil all over and fold to form semi circle.

  7. Again apply ghee/oil and fold again to form a triangle shape.

  8. Roll it into a big triangle.

  9. Transfer this triangular paratha on hot griddle and lightly cook on both sides.
  10. Remove from heat and open one of its side. Fill it with ¼ of filing. Seal the edges by lightly wetting it with water.
  11. Again transfer it to the griddle and cook on both sides at low flame till golden brown and crisp.

  12. Serve hot!

  1. Omg, you think surely out of the box Ritu, those vermicelli stuffed parathas looks absolutely incredible, kids will go crazy of they see this paratha. Quite a lunch box friendly paratha for the sure.

  2. Very innovative paratha , vermicelli in Paratha must have tasted awesome . Yes if we can use them in Samosas why not Parathas ? Loved your way of stuffing these parathas .
    I would prefer to eat these parathas made by you but by the time we get to do that I will make them some day !

  5. A wholesome meal Ritu, what a wonderful idea and recipe. I have quite a bit of vermicelli and now I know how to use it up. You’re so right, V was a difficult letter and I had to research a lot for a traditional flatbread.
